Moist and Chewy Pumpkin Chocolate Chip Cookies

Today is my birthday! So I thought I would share a treat with all of you; my favorite pumpkin chocolate chip cookie recipe.


One of my favorite things about Fall is all the yummy pumpkin goodies I can make! In the past I typically make pumpkin bread rather than cookies. Mostly because I have never like how poufy and cake-ish most pumpkin cookie recipes turn out. I want my cookies to taste moist and chewy like cookies should, know what I mean?



Then I found and adapted this recipe and I have gone to pumpkin heaven! These cookies turn out moist and chewy- just like cookies should be. Plus they still taste like pumpkin- YUM!


Moist and Chewy Pumpkin Chocolate Chip Cookies

½ cup shortening
1 ½ cup sugar
1 egg
1 cup pumpkin
1 teaspoon vanilla

2 ½ cups flour
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon nutmeg
1 teaspoon cinnamon
1 (12 oz) bag chocolate chips (2 cups)

Cream together the shortening and sugar. Mix in the egg, pumpkin and vanilla. Add the dry ingredients and stir in the chocolate chips. Drop on greased cookie sheet. Bake for 10 minutes at 375 degrees. Bake just until the edges and top start to turn golden brown. Don't over-bake!  Makes 3 ½ dozen or so.

So go make the best pumpkin chocolate chip cookies you will ever have! While you are at it, bring some by my house. We ate ours up already!
