For me, watermelon is best the day you slice it open and the next few days. Any longer in the refrigerator and it loses its crispness. Since my little family cannot eat an entire watermelon that fast, I was trying to figure out what to do about the excess. Then I came across frozen watermelon smoothies.
I had heard that you can't freeze watermelon, but that's not true. You can if you don't really intend to thaw it out completely. Here's how to make delicious watermelon smoothies. They are super fast and easy.
*Slice watermelon into cubes and freeze (a ziploc bag works well).This will make a yummy watermelon slush. If you would prefer something more creamy, leave out the sugar and lime juice and just add a scoop of vanilla ice cream or an 8 oz. lemon yogurt.
*Take frozen watermelon cubes and thaw slightly to make blending easier.
*Add a teaspoon of sugar (or more depending on the sweetness of your melon)
*Add 1 tsp lime juice
Blend until smooth.
Enjoy!
Oh this is a great idea - we planted some watermelons earlier this summer and they are growing out of control... we may have to make a lot of this!

ReplyDeleteGreat idea!!!! We buy watermeon sherbet in the summer and mix with lime soda to make shakes-this is much healthier and uses up all of the watermelon at the bottom of the bowl (wich I happen to have right now).

A great way to make a smoothie with just a food processor (not a blender) -- without having to blend ice or lots of liquid.
I just got a 8 pound watermelon for $1.00. I was trying to figure out what to do with it and I went on bing to make sure I could freeze watermelon. Then I clicked on the link and it brought me to your site. So long story short I am going to freeze them and have a lot of watermelon chocolate chip ice cream smoothie for a long while. I am the only person here. So it might take me a little while to eat and have smoothies. But that is ok I can give some out to some friends also. So anyway thank you for a great idea.
